Hope you don´t mind a layman´s question: what is wrong with g5 for white, after having moved the King to f1?

Well, it would allow knight h5 and also the use of f5 for black's pieces; it's probably better to build up with pieces as best as possible before pushing further with the pawns. Hope that explains it!
