While visiting Appleton Estate in Jamaica during a rum consulting trip, we had the pleasure of witnessing their coopers at work, assembling oak barrels that would eventually be used to age alcohol for their many rums. In all our years of travelling to the Caribbean and visiting rum distilleries, this was the first time we saw a cooperage where workers would work to the rhythm of their own tools. It was fascinating.
