  • I take them out of the hot water to stop the cooking; if your remove them from the oven when they are loosly set you need to do this. If you want to let them continue cooking in the water take them out sooner (while still quite liquid in the center).

  • this is very interesting to watch, you are obviously very knowlegeable. I do have one question, though. I know some people who do not remove the ramekins from the water immediate after the oven, but you said to do so. What is the difference?
