Best to use only raw and organic ingredients of the highest quality.

INGREDIENTS

CRUST
- 2 cups truly raw cashews
- 1 cup dates, pitted and soaked for an hour, reserve soaking water
- 4 tablespoon reserved date water
- 2 vanilla beans extracted
- 1/4 teaspoon sea salt

FILLING
- 2 young Thai coconuts (Meat and water)
- 1 cup of coconut oil
- juice of 1 large lemon
- 1/4 cup agave nectar
- 1 vanilla bean extracted
- 1/8 teaspoon sea salt

METHOD

CRUST
In a food processor, process cashews, dates, date water, vanilla extract and sea salt until well combined. Remove almond mixture and press mixture into a 9-inch pie pan.

STRAWBERRY SAUCE
Process strawberries and agave in a blender.

FILLING

Place in blender
coconut meat
coconut water
oil
lemon juice
agave
vanilla
sea salt

Process until smooth and creamy.
Pour filling into crust.
Chill in the refrigerator for two hours.
Garnish with strawberries and strawberry sauce.

Great for parties or a special dessert

Note: This recipe requires a good amount of coconut oil to make it set.

  • Hello velveteenbunny, leave it in the freezer for at least an hour and a half.

    I would definitely recommend adding melted cacao butter to the mix (at least 1/2 cup) to help this cake set and stay firm. It did come out a little soft for my liking at the end, but still very nice and presentable as you can see.

  • Yes, cacao butter is a good idea to make it set.

    I just used a ton of cacao butter making a chocolate ganache pie. Cant wait to film it and put it up on here :)

    And yes that is a Vitamix, a pretty good machine considering we use it countless times a day.
