    This is NOT ceviche

    1. None of ceviche recipes have olive oil, vinegar, tomato or cilantro.

    2. It's prepared and eated at the moment, no more than 5 min between preparing and eating. No one in Peru marinates their Ceviche for 8 hours.

    3. Ingredients for ceviche are: fresh fish, lime, salt, pepper, peruvian chiles, onions in juliana cut, all mixed togheter at the same time. Than eat it right the way. See? simple, rite?

    4. He hasn't ever seen a ceviche.

    5. Trust me, I'm Peruvian.

  • WTF!!! that is not Peruvian Ceviche

    1 You don't use Jalapeños

    2 You do NOT marinated it for 8 Hours,10 min max

    That "Chef" needs to go to Peru to eat Real Ceviche

  • @mickymocko I agree and disagree, surely every family does it differently there's als gonnabe slight changes to the recipe, You can put cilantro in your ceviche its quite nice, we put in rocoto (peruvian peppers) instead of jalapeños, also we have it with boiled rice as a side and add sweetcorn as well, defo dont leave marinatin for 8 hours thats just ridiculous! Ive had it with tomato as well, but defo no vinegar or oil. Oh and I am also peruvian.

  • I'm a peruvian chef, the real ceviche is eating instantly and we don't use olive oil and tomatoes, I have no idea where you found that recipe, but definitely not a peruvian ceviche. sorry pal

  • Ceviche is w/ "C". 1)Do NOT use jalapenos, peruvian chiles r MIRASOL & LIMA, look for them @ intrntn'l markets. 2)Jalapenos have a completely different taste, eventhough they look similar 3)marinate fish & onions w/the lime juice that must have minced garlic & ginger, salt, peruvian chiles (minced & in small pieces) & few cilantro. 4)FORGET the fridge for 8 hrs, it should be marinated for half hour or depending on the amount of fish used, check the pieces of fish until u get the whitish color
