This scrapple recipe is a modern version of the old Pennsylvania Dutch breakfast favorite. Along with less "scraps" and leaner cuts of pork, this recipe uses polenta for a lighter texture.

Maybe its because I grew up and currently life in a PA dutch area...but I can tell that what you're is not scrapple.

John... great to finally see your face after watching many of your recipes and hearing your voice! LOVE your scrapple recipe! Lived and worked in Lancaster, PA where scrapple was always available! Now living in the Netherlands, this will definately be on an upcoming weekend breakfast schedule! Is scrapple able to safely be frozen if I make extra (a house hold of 2).
