@iriekitchen OMG! your recipes have me wanting to come through the screen and join you for dinner. I am a food enthusiast and am passionate about anything food. I know food and can spot a good cook a mile away. Personally food is a very personal thing and I don't think it is insulting to put your own spin on a dish. Everybody has their own way of preparing a certain dish. I think maybe the person who commented above is just mad because he or she is mad that they didn't get any.

If it has your own spin on it then it's your fish and not Escovitch fish!!!!! Stop insulting Jamaican people by advertising your concoction as a traditional dish!!!!

Then i would be insulting myself. I was born and raised at 13 bunyan cres. duwaney, kingston 20. I respect your opinion, but i believe my people are people of strength and true wisdom and therefore are not shallow enough to allow a piece of fish and how it is prepared to insult them. There are wars, famine and devastation throughout our world, Jamaica itself was just hit with a earthquake(the same week as haiti), there is much much more things out there to focus on.

Looks very tasty & appetizing. However, you never mentioned what you are cooking your escovitch in. Is it oil, or perhaps winnegar (mixture of water & vinegar)?
