Actually you can buy moose at on line from a specialty meat company. Yes I do have friends that hunt moose but most of the of the moose I cook comes from customers that bring in the meat and I cook wild game dinners here at my restaurant.
Most all of the recipes that I post you can interchange the wild game meat for domestic meats, as in this place beef will work very well.

Moose should be spiced simple, just bringing out the raw wild taste. Salt and pepper! But nice tips for us who have their freezer full of moose :D
