For the same reason the US does NOT say they speak american. Because, like them, we came from somewhere else, we're not natives to this land.
In both cases, the respective country, Portugal and the UK made sure their languages were the major and possibly the only one spoken in both their former colonies.

@StarvMarv So If I were to learn portuguese, which would you recommend me to learn first. For instance, English from US is well understood, but English from Europe may take more attention to understand. I would like to pick the one with the US English tonation if possible.
