Listen to someone like Kempff playing beethoven... notice how the velocity of how he hits the notes changes so much. You pretty much just hammer it hard all the way through, which makes it sound flat (not flat as in sharp/flat, but a bit dead) I'm no pianist and couldn't do any better though!
