Is there a mozzarella recipe that is healthy - i.e. dairy free? Would be very much interested in a raw vegan mozzarella-type recipe.

@byonjyo most fresh mozzarela does not melt anyway,if you heat the milk you lose the benefits of raw milks enzymes.yes you are correct in stating its not a mozz.recipe,but def.not queso blanco!

This is not Mozzarella recipe!.. This may be a sort of a cheese since you're coagulating the milk with a lemon acid but definitely is not Mozzarella due to the fact that you're not cooking the curds. You may call it fresh curds from raw milk, but not mozzarella..

Heat 1qt milk 104 degrees
Add 1/2 cup lemon juice
Strain
Add salt
Press out liquid
Enjoy
This sounds more like Queso blanco just with more acid. This is not a melting cheese.
