  • The idea of cooking a tagine is to COOK IT IN A TAGINE..... Not a saucepan!!!!!

  • This is really popular in the south of Brazil...we call it Quirera

    Instead of sweet potato, we use mogango (green skinned pumpkin), which is also sweet and soft. Many variations exist, inclouding using pork ribs, bacon and linguiça calabresa (a sort of smoked chorizo).

    It is delicious, and one of my favorite dishes in the winter...
