@nigek You could certainly rub the butter into the flour. The idea is to get the butter fairly evenly distributed in the flour. The rule of thumb always seems to be to get the butter pieces the "size of a pea" -Cindy

thanks that was such a helpful video! but i'm just wondering.. will the scones turn out differently in terms of texture if i rub the flour and butter so that it forms a fine consistency rather than leave visible chunks as demonstrated in your video?

Could the clotted cream be used as a base for finger sandwiches? If so, how long before (the tea) would I have to assemble the sandwiches?

@narutoandhinata4eva9 I think this clotted cream would be too wet for tea sandwiches. It would probably make them way to soggy. -Cindy

@harwoodpodcast Then, would using regular, unsalted butter taint the flavor too much?
I'm hosting my very first tea party on the first of November, and, it's been brought to my knowledge that none of my guest are fond of mayonnaise.
Are there any other alternatives?

@narutoandhinata4eva9 An unsalted butter would be fine to use. You can also use cream cheese. Many tea sandwich fillings use mayo in them, so that may be tricky. You could try my Curry Chicken Tea Sandwiches, but instead of mayo, add a bit more of the heavy cream to moisten. How hot should the oven be for drop scones?
