WONDERFUL recipe!!!

Great special occasion recipe, for those who want to enjoy this more often without the calories and saturated fats I make a version using Olive oil. poach the onions, garlic and potatoes in olive oil till almost done, 12mins ish (seasoned with, S & P, nutmeg, bay and thyme) then make the roux with some of the olive oil instead of the butter, use whole milk and add a good Parmesan along with gruyere (less cheese used). Bake in a hot oven 20mins, finish under the grill

Scott: Great recipe; I added minced mushrooms to the onions, and used grated cheddar and Colbyjack cheese, and it was the hit of the meal. Best Au Gratin potatoes I've ever had. Thanks for the inspiration.

Love your recipe - esp. the Southern cayenne touch - and onions (yes!!!)& will make it! I've a variation - par boiled potatoes; shredded cheddar; 'dollops" of cream cheese; tarragon; 1/2& 1/2 and heavy cream - salt and cracked pepper. Layer the potatoes w/cheeses and tarragon - salt and pepper and pour 1/2 &1/2 & heavy cream over each layer. Cook the same way. I'll serve w/Christmas ham, green beans, a big salad and lovely French bread. Make this using bits of any good leftover cheese on hand.

Scott: I have tried this receipe now two times and can say that this one is On the Money! The second time though, I added the cayenne pepper as you suggested as an option and can say that this small amount of spice can really pizazz this one up a lot!

tried this and my husband loved it :) keep up the great recipies :)
I was able to try this a few days ago and it was amazing! Even my picky family liked it.I dident have any gruyere cheese so I ended up useing parmesan and swiss only but it was still great.Ide love to try it with the "right" type of cheese though. Many thanks!

If you're allergic to onions I would omit them completely. They add a richness to the dish but are not necessary.

Scott, question for you, what exactly is half and half, we dont have that here in ireland, can i just use single cream?

Half and Half is a product that is half heavy cream and half whole milk... You can just mix your own using equal portions.
