There's a great place in the Earth Cavern(not sure if it's there in the GBA version, but it's there in the PSP one) just west of the entrance that's great for grinding and Gil farming. A (not so) random encounter literally every step.

By the way, thieves are actually good, but only at the end of the game. The minute I got Masamune for my ninja, he was the heaviest hitter on the team. Obviously, that's the last dungeon, but nonetheless.

I finally got myself the game and have three parties set up, one mimicing the party seen in 8 bit theater another using the "True Light Warriors" also from 8 bit theater and the party you showed here, the Thief is actually pretty good, his attacks generally match the red mages and often times exceeds them so for a strategy focusing on offense a thief is actually pretty darn good.
