If I wanted to solder the LED to the board, could I heat the back of the board with a soldering iron or would that not work?

Keep in mind that LED structure is a crystal. By cooling it in a water, You 're shortening its life around ten times. On Cree homepage is preety big tutorial about soldering them. I make LED lighting for living. Trust me. Things like that only kill diodes. It's 100 times better to let it cool on its own.

WOW.. you touched the heatsink star? I had to use a rock to separate mine it was so hot.

is it possible to solder the emiter onto the star in an oven? or would this damage the emitter?

It would be possible.
But, as I found out recently, heating the whole part from underneath with a hot air gun works better and faster.

Well, a split second touch does not transfer enough heat into the skin to cause severe burns. It's like moving the finger quickly through a candle flame; we all did this as kids :-)
But recently, I found out that it is much simpler to put the basis in a third hand, and to heat the thing from below with a hot air gun. Then remove the Cree with tweezers. Place it on the other base, heat it from below, too, done. Much simpler.
