Alexander Schreiner, on the Mormon Tabernacle organ, is the best I ever heard. Also his performance of Carillon de Westminster is best ever despite his using the organ tubular chime stop.
You could always check out Vierne's Impromptu from his 'Pieces de Fantaisie', or the Divertissement from his '24 Pieces en Style Libre'. They are similar I suppose.
I totally agree, the organ is capable of so many amazing colours and effects, as masterfully demonstrated here by Chelsea. Despite this, many people still misunderstand or under-estimate the instrument, which is a real shame.
