Barbecue is as varied as the restaurants and the people who prepare it. Ranging from dry to wet, from ribs to chicken, from sliced to chopped to pulled, secret recipes are protected and defended. Sides are taken between East and West Tennessee. There is so much to explore that Tennessee Crossroads decided to take a special road trip, venturing all over the state looking for rib shacks and barbecue joints that highlight these differences and the people behind them. In Tennessee Crossroads: Smokin host Joe Elmore, Rob Wilds and Susan Watson stop at all manner of places, from the historic to the new to everything in-between. They even visit a couple of annual BBQ festivals for good measure. In this introduction to the special, we look at a brief overview of BBQ, what BBQ means in Tennessee, the different ways to prepare it, and BBQ festivals.
