toad in the hole with veg and gravy... this is a dish consisting of a batter pudding , yorkshire pudding , baked around the sausages , lincolnshire pork sausages are my favorite ,it absorbs the flavour of the fat exuded from the meat in cooking . i served this with mashed potatoes and carrots n swede with leeks in cheese sauce and steamed callibreeze , a purple sprouting brocolli and gravy . this only took minutes to prepare as was mostly left overs from lastnights evening meal. arent microwaves a wonderful invention?

  • Try it with onion gravy. Thinly slice about four medium onions and fry in olive/vegetable oil for about an hour and a half (or more) on a low heat stirring about every 10-15 minutes. The sugars in the onions caramelise from the inside out rather than being singed at the edges. When you have a deep dark brown mush in the pan add about 400ml of beef stock and a glass of red wine or ale then stir and sift in about 1 1/2 tablespoons of plain flour in until you have the thickness you like.

  • I like fried cabbage and mash with my toad in the hole. It means bubble and squeak the next day!
