主料 / 雞腿2支、蝦仁6兩、肥肉1兩、蔥1支、薑2片、芹菜末、胡蘿蔔末各少許
調味料 / (1). 鹽1/3小匙、醬油1/3小匙、胡椒粉1/3小匙 (2). 酒1/2小匙、鹽1/3小匙、太白粉1小匙
做法:
1、 去骨雞腿肉剁斷白筋後,用調未料(1)醃製入味備用。
2、 將蝦仁拍碎加入肥肉剁成蝦泥狀,再加入(2)調味備用。
3、 將醃置入味的雞腿肉攤平,灑上少許的太白粉再鋪上蝦泥後,入蒸鍋蒸10分鐘後取出備用。在蒸熟的雞腿肉上灑上乾麵粉,入油鍋炸至香酥,起鍋後切塊排盤即可。
