I realize you are probably a proponent of eating raw, but cooking of elderberries greatly reduces toxins. I also use them medicinally in syrup as a cold/flu preventative or remedy and in jelly and I've never had any problems. They are very high in Vitamin C.

The seeds have most of the cyanide toxin. You can use a glass bottle to gently squish the juice out of the berries without crushing the seeds. ‘Blue elder’ of the western US is very closely related to the darker purple colored ‘American elder’ of the eastern US and the ‘black elder’ of Europe. All three can be used more or less in the same way so long as the berries are fully ripe. The USDA considers all three to be subspecies of Sambucus nigra (ssp. cerulea, ssp. canadensis, and ssp. nigra)

Благодарю, Серёжа, за видео. Очень нужная информация. Я недавно посадила маленький кустик этого растения на углу нашего дома. Не знаю только какого цвета будут ягоды: красного или синего. Надеюсь, что синего. А если вдруг они окажутся красными, то их вообще лучше не сеть или есть еще меньше, чем синих? Спаси Бог.

i ve never seen elderberries ever turned that white here :S .... they r always having a shiny surface ....and when nobody picks them they just dry ......
