Its not the pension and health insurance issues that people are protesting. It's the fact that it strips away 50 years of progress regarding workers rights. Collective Bargaining is even a part of the Universal Declaration of Human Rights. Collective Bargaining allows employees to negotiate with employers regarding wages, work hours, health and safety regulations, what constitutes a fair termination (so an employer can't fire someone they just don't like) etc. It as a bad thing to take away
