You don't "kill" enzymes, because they are not living. Centrifugal juicing exposes the juice to air that accelerates the decomposition of the juice; that's why Jay says to drink your juice within 20 minutes.

@renell Not true. MOST of the nutrients are actually still in tact, even with a centrifugal juicer. It takes over 110 degrees + to kill enzymes, and MOST juicers even masticating ones are operating with SOME heat but under that temperature where no serious harm is done. Decades of people juicing and changing their lives attests to the fact that "most of the nutrients and enzymes are dead" is just flat out false. Lets not be hippies and split hairs about minuetes. Juicing changes lives.
