I know this is an old video, but I am really curious about something. At 2:55 you say when doing extract brewing the boil volume doesn't matter, you can top off with tap later. When is later? If I boil 2.5 gallons, when do I add the additional 2.5 gallons?

Hey, sorry it has taken me so long to reply. After you have cooled the brew, you want to add cool water up to five gallons. so after you have added the hops, and then cooled it off you add the top up water.

I once made the best beer ever. I am a bee keeper and I used honey instead of sugar. The gout put an end to my brewing.

I love putting honey in my beer. It always gives it a great flavor. If you are a bee keeper you should make some Mead.
