This is our first attempt to process our own coffee. We picked the beans from wild coffee plants and are planning to process them completely ourselves. We'll see how this goes.

  • im wondering do you get the green beans out of the hard shell? The shells are like rocks how do you break them?

  • Just made a video today of the process and posted it. Check it out, I am posting it as a video response to this video. Actually breaking the parchment isn't very hard, just time consuming.

  • can you please tell me after its dried what do you do then... i am wanting to know if you take the shell off the bean one by one after its dried.

  • Unfortunately that's how we have done it so far. It's a lot of work. I'm going to make a video of that soon and our roaster. we'd like to buy or build a better de parching machine but for now, we are stuck doing the old fashioned way :)

  • This is the first time I have seen coffee cherries soaked and then pulped. Is there a reason to do it this way?

    The wet processing method I am familiar with is to pulp the fresh picked cherries, then soak in water for 18 hours, rinse and sun dry for 5-10 days until they are at a moisture content of 10-12% by weight. At this point you have parchment.

    The paper layer is removed to expose the green bean. This gets roasted to create our coffee.

    Where are you located?
