Hi, The piping gel just works as an adhesive. You need it under & over the rice paper ONLY to soften the rice paper. To maintain it's freshness, don't do it too much in advanve.
You don't really need to use the whole RP too, if you have a small design, Just cut around your design and place it on, not long before you need to display the cake. Not every body likes to eat RP too.
Depending on your design you can complete the entire cake decortion in advance. Good luck, let me know how it goes

wouldn't it be chewy? I've worked with rice paper before and once it gets wet it turns chewy..is there a certain brand you use?

@ItsAnniesTime - We didn't actually eat it.. I think you probably right about the chewy part but didn't seem to bother anyone, but it's still edible and if some one doesn't like it they don't have to eat it. You can also do this on fondant ad I have a video on that too. check it out.

@MrBananakick123 - Hi - You should get them at any of the Asian stores, They are the same ones that you use to make Vietnamese Spring Rolls. You can also do the same on Fondant.. Check my video on that. Sorry can't help more. All the best.
