【材料】:吳郭魚1尾、青木瓜1/8個、鳳梨100克、大蒜3瓣、香菜3棵、辣椒2支、檸檬汁2大匙、魚露1大匙、蝦米1小匙、糖2小匙、花生適量、太白粉適量
【做法】:
1、首先去除魚骨,取下魚肉的部分,再將魚肉切片。
2、起一熱油鍋後,把魚片裹上太白粉,再把魚骨也沾上太白粉,把多餘太白粉拍掉放入鍋中炸,把魚尾和魚頭夾住,使魚定型成彎曲狀,即可撈起。
3、將裹太白粉的魚片放入鍋中炸,當魚片浮起後,轉大火逼出水分後,撈起瀝油。
4、起一熱鍋,把蝦米炒香切碎。
5、取一容器,把魚露、檸檬汁、去子辣椒末、蒜末、香菜末倒入。
6、把青木瓜去皮切絲,倒入攪拌均勻,再加入糖、蝦米,將小番茄切片後,攪拌均勻,即完成泰式醬汁的部分。
7、將魚骨放在盤中,把魚片鋪在魚骨上,淋上泰式醬汁後,最後灑上花生、香菜,即完成「泰式炸魚」。
