This video features dishes inspired by one of my favorite countries, Spain, and I'm making Tapas - these one to two bite treats. In this first series, I'm making salmon croquettes - seasoned salmon and bechamel, formed into small patties and coated with panko breads crumbs, then lightly fried. Next, smoked Spanish mackerel, cured with salt, pepper and sugar, then mesquite smoked for 2 hours. Then steamed mussels and a spicy mixed seafood diablo (made with mussel meat, scallops, calamari and shrimp in a broth of San Marzano tomatoes, worcestershire sauce, lemon and orange juices and Rotel and Sambal Olek for that spicy kick) round out the courses.
