TOTALLY BOGUS RECIPE !
Pesto has-
fresh basil
grated goat or sheep cheese
olive oil
pine nuts
garlic
and a trace of salt + pepper
Any other recipe is an evil-fake-nasty distortion.

My mom never had a food processor, either, and she used a mortar & pestle. Or just chop everything up as fine as you can. Or try it in a blender.

You can try your favorite oil; olive oil is just the traditional oil used.

I made a nice sandwich with pesto & mayo mixed together, smeared inside of a pita, tossed in some grilled veggies and topped it with Feta - really good.

Can you eat it fresh? Or does it need to be frozen first??

I made a load of this pesto and have it frozen. After defrosting I spread it on toasted thin sliced french bread, topped with a slice of tomato. I have also popped a few in my marinara sauce. Perfect way to salvage the huge amount of fresh basil I grew this year in my garden. Thank you for the recipe and freezing tip.
