It tasted great. If you wanted to make it kosher you could use beef bacon. After making this I found a recipe for making pastrami completely from scratch. I cured the brisket then coated with crush black pepper and coriander. Then smoked it, without the bacon. Haven't eaten it yet, I vacuum sealed it and put it in the freezer for later.
Interesting recipe. How's the taste?
Won't find that in Jewish deli! Bacon is not kosher.
