Mike thats not mozzarella yet thats just curd. Your now supposed to cut the curd into smaller and somewhat equal portions and spoon over simmering water. The curd will melt. I use a spoon to lift the curd and stretch in and out of the hot water bath making sure all the curd is melted.( some ice water near by used to cool my hand if it gets to hot ) you then form a ball and drop it into the ice water with some salt for flavor. You could also freeze curd for up to 6 months.

@mvinci145 Your right I don't show the hot water salt bath and ice water cool down, but I do that on my cheese.

how long last in fridge? can freeze? Is there a step where you hang cheese and let drip more or you just package into plastic bags after pour whey out? What to do with all the whey? Is true you can make ricotta? Will you make a video of ricotta? Thanks.

@LietMonty I save some of the whey, but most of it gets dumped. I've tried making ricotta, but I think I need more whey to produce a significant amount of ricotta. There is a brief 15 minutes of drying the curd in cheese cloth. After melting and cooling the cheese in a salt bath I bag it up. It's good for almost two weeks in the fridge and can be frozen for months.

Does it have to be raw milk?
Can one use grocery store milk to make mozzarella cheese?

@puggychu store bought milk is fine. It does not need to be raw.
