Sue Mallick with Food City presents a wonderful recipe for Watermelon Petit Fours with Pineapple Cream Cheese Frosting at Food City's Cooking School. Ingredients:
1 water melon; 1 pkg fresh blueberries; 1 recipe pinapple cream cheese frosting; 1/2 cup drained crushed pineapple; 1 pkg cream cheese; 1/4 cup powdered sugar; 1/2 tsp vanilla

Mix pineapple frosting, drain pinapple very well on paper towels. Beat cream cheese and sugar until fluffy, beat in vanilla and then mix in pineapple. Keep refrigerated. Cut watermelon into 1 inch cubes, then cut in half. Arrange 1 piece on a platter, top with 1 tsp pineapple frosting. Top with second half of watermelon. Pipe pineapple frosting onto top of watermelon pieces and place a blueberry on each.

  • possibly using mashed bananas for the cream part, would probably make this recipe more easier to make and healthier, just a thought, but it does look interesting like a watermelon short cake :)
