@toptone - I would very much doubt it - there is no amp to drive the headphones. I have a Traveler Speedster and use a VOX Amplug headphone amp. Does just what you describe - stick a battery in the amplug and headphones/ear buds in it and you're ready to go. Depending on your music style, I use an acoustic simulator, they also come from VOX in rock, jazz, etc. styles. Around $35 and very small - looks like a right-angle plug. The Pro-series has the stethoscope for unamplified playing.

Can you use a 1/4" to 1/8" adaptor and plug earbuds into the output jack?

@topotone, @RGPoser is correct, you'd need a headphone amp. However - we do have models that come with headphone amps - check out the Escape MK-II in the acoustic line, or the EG-1 or EG-2 in the Electric line.
