【材料】:小章魚12隻、蛋1粒、青花椰菜1朵、洋蔥1/4粒、乾辣椒30g、蔥1支、蒜頭1粒、碗豆酥少許
【調味料】:醬油膏5大匙、糖4大匙、米酒少許、太白粉適量
【做法】:
1、先把洋蔥切絲,乾辣椒對半切去籽。
2、接著把小章魚沾滿蛋汁後,再裹上太白粉。
3、起油溫約160度以上的油鍋,再把裹好粉的小章魚放入鍋中炸,炸至外皮酥脆後即可起鍋瀝油。
4、起一滾水,把花椰菜、紅蘿蔔放入鍋中川燙,再放入少許鹽增色後即可先撈起擺盤裝飾。
5、起鍋熱油後轉小火,加入紅辣椒蒜末爆香,接著加入少許水再把酒倒入嗆鍋後,放入醬油膏、糖調味。
6、接著再把蔥段和洋蔥放入鍋中稍稍拌炒後,再把小章魚放入下去拌炒。
7、起鍋前再把蜿豆酥加入即完成這道「香辣小章魚」。
