u overcooked the fish aready. fish takes hardly 3-4 minutes to cook and u cooked the fish first. then again u fried it. its definitely going to be a dry fish cutlet.

This is not a fish cutlet, I would say fish Vada. The authentic fish cutlet which I had in India always had egg for binding and coated with dry bread crumbs just before frying.

Hmm... Never thought of cooked tilapia. I use canned premium salmon( omega 3) for my fish cakes. Instead of onions I put lots of scallions, grey poupon( a touch), cilantro, lime juice, green chillies, fresh black cracked pepper and ofcourse egg. No bread crumbs.

We have not tried it but sooji may work as well as rice flour.

Thanks for the recipe. I tried it with tuna. awesome. also one time I added finely chopped fresh green spinach(cause it doesnt have to be cooked like other saag). it added some freshness and cruncies...
