I was under the impression that garlic was harvested after the top foliage had died off is this true? An explanation would be much appreciated. Thankx.

G'Day! Great video. I'm a farmer from Western Australia and we grow a small area of horticultural crops like pumpkins, rockmelons/cantaloupe, zucchini and a few others including a heactare (2.471ac) of fruit trees. I would love to try to plant garlic say 1ac but seed cost would be over $50,000 to buy and is hard to get hold of so at the moment I will stick to growing garlic in the home garden.

30 Acres of garlic...wow!
Typically, when garlic is harvested is very dependant on as to whether or not it is a softneck or a hardneck type. To produce brilliant, white bulbs that are the equal of anything from warmer climates, evoking the magic and mystery of garlic, lift the crop as it goes weak at the knees, as soon as 10% have gone over. For hardnecks look for a yellowing of the outer leaves. The stems will still be green and the bulbs at this stage cannot be stained.
