Ube Halaya or violet yam is valued not only for its taste but mostly for its beautiful color. Grated and ground, it is made into haleya or jam that is molded in pans of different shapes or packed in bottles. In the olden days, to attain a uniform fine consistency, the ground ube was sieved using sinamay.
