This harness has a lot of slide, meaning the individual wraps are not isolated. So would that make it unsuitable for load bearing since it might slip and pinch or might it be a gentle way to support weight due to being self distributing.

More specifically iIm thinking of a second length of rope looped over the entire junction at the back for the upper portion of a tabletop. Is that a foolish idea?

Not all shibari is for suspension, Knotsoevil-san. :-b I wouldn't hang someone from it even tabletop, since there's a bit of tension at the base of the neck that could constrict the carotid if bearing weight. But since you're already planning to bust out another rope, you could use a simple "box tie" around the arms, using just one parallel line above and below the breasts (woven under the pentagram but with no sternum weave) and a single cinch on each bottom line under the pits. Experiment?

Nice! I wonder whether it can be done without that extra line across the bottom of the pentagram. Perhaps if it started with a good luck (pentaradial) knot at the back, and had a crotch rope? Or, if it were OK to put the pentagram the other way up, the running ends from the good luck knot could go over the shoulders, and all 4 bights could go around the ribs/waist.

If you had a 10'-longer rope, could even just start with a bight hanging down from the bottom of the sternum (center chest below the breast line), bring that down under the crotch and up to the center of the back. Make any knot (double overhand, square, double coin) at the back, then bring the ropes over the right shoulder, down through the bight and up to the left shoulder and down to the knot on the back. Then continue tying the pentagram as shown in the remaining steps in the video. :-)
