Salmon is a great ingredient! Being that I am from Oregon, Salmon is almost a staple here.

The head is used for soup stocks and sauces. It takes a long time to stew out and prepare as you can see on a lot of other battles. They are going for the fresher salmon flavours rather than the heavier fishy flavours.
