Coconut Shrimp Recipe - Crispy Fried Appetizer with Lemon Ginger Dipping Sauce

Ingredients:

1/2 pound (26/31) shrimp cleaned and dry
Oil for cooking

Sauce:

1 tablespoon coarsely chopped ginger
1/4 cup lemon juice
1 tablespoon honey
2 tablespoons plum sauce
1/8 teaspoon sesame oil
1/2 teaspoon corn starch (mixed well)
2 tablespoons cold water

Bowl #1 Egg wash:
2 eggs mixed
2 tablespoons milk

Bowl #2 Dry mixture:
1 cup flour
1 teaspoon salt
1/2 teaspoon white pepper

Bowl #3 3/4 cups Panko bread crumbs and 3/4 cups sweetened coconut

Preparation:

1. Combine ingredients for sauce except water and corn starch. Bring to a boil and set aside on simmer
2. Mix shrimp in bowl #1, then bowl #2, then back into bowl #1.
3. Coat shrimp on each side ONE AT A TIME in bowl #3.
4. Placed onto wax paper
5. Deep fry in 375 degree oil until golden brown
6. Bring sauce to a boil
7. Add corn starch and water and stir to thicken
8. Pour sauce into ramekin and serve.

    Wax paper or even better parchment paper because you can bake with it can be found in the same section as the aluminum foil or plastic wrap.

    Perhaps if the chutney is Puréed with no chunks. Give it a shot!.

    You can try plum jam but I think it's best to leave it out. Plum sauce can be found at Asian markets if you have any. Thanks for watching.
