He is heel and toe-ing but he doesn't appear to need to double declutch. That demonstartes the skill level involved in driving these cars beautifully. Absolutely fantastic video
He is not double de-clutching and it is hard to see whether he is rev matching - but I presume he is doing it with the very heel and it is not easily discerned.
notice how the bend at the end of the tunnel 3:05 can be taken more of less flat out in third here as opposed to a second gear change down on todays Monaco circuit.
