Yes there are albino or white colored deer in theHunter!
I have only seen albino looking whitetail does, in various locations. There have been albino/white bucks seen in the game in the past but that was sometime ago as I have not see anyone post about seeing any in the forums recently as far as I know, so I am thinking the bucks were in an earlier version, but there could still be out there waiting to be spotted. It isn't called Whitehart island for nothing. ;-) I have seen plenty of white does though and still see them often.
These albino does do indeed sometimes look cream or blond, it depends on the shadows and your computer but in bright light they usually look bright white. And yes they have pink noses.
