Vegan Red Velvet Cake is probably one of the most highly coveted desserts and people take it very seriously. And Vegan Red Velvet Cupcakes? People go crazy for Vegan Red Velvet cupcakes. So I knew when I made this recipe, I was going to need some help from the experts. This recipe is crafted from Hannah's blog Bitter Sweet http://bittersweetblog.wordpress.com/... because she has it all tested, and I do not. I can not wait to try these.

Natural Vegan Red Velvet Cupcakes with beets
Yeilds: 1 dozen cupcakes

What do you need to make vegan red velvet cupcakes:

1 1/4 cups all purpose flour
1 cup granulated sugar (beet sugar, usually packaged like granulated sugar)
3 tablespoons natural cocoa power (not dutch processed)
1 tsp baking powder
1/4 teaspoon salt
1 - 8.25 ounce can beets (in water, no salt)
1/3 cup canola oil
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/4 cup water

How to make Natural Vegan Red Velvet Cupcakes with beets:
Preheat your oven to 350 degrees and line a 12 count cupcake tin with baking papers.

Sift flour, sugar, cocoa powder, baking powder, and salt together in a large bowl.

Pour in the beets and beet water in a food processor (blender, chopper, whatever you have). Process until beets look like red applesauce. Add in the canola oil, lemon juice, and vanilla extract and continue to process until everything is incorporated.

Add the processed ingredients to the dry ingredients and stir with a spoon until dry ingredients are no longer visible.

Distribute the vegan red velvet batter throughout the cupcake tin using a ice cream scooper to insure equal size. One scoop per cupcake paper.

Bake the vegan red velvet cupcakes for 18-20. To check for done-ness, insert a toothpick in the center of a cupcake. If it comes out without moisture or sticky crumbs, then the cupcakes are done. If they are not done, but them bake into the oven and check them in one minute intervals.

Allow the vegan red velvet cupcakes to cool to room temperature and applying the mandatory vegan cream cheese frosting.

    made these today, used fewer beets than the recipe called for, but the cupcakes still came out tasting very BEETY. D: D:!!!! oh well, since yours turned out great, the recipe's probably fine; I'm just an awful baker.

    Oh no, it takes trail and error, and different beets have different taste. I personally think beets taste like dirt, so I would keep tinkering the recipe. Or, you can try to find natural red food coloring and just take the beets out all together
