instead of olive oil on the outside I use his aioli recipe it is awesome! and it gives me an excuse to make that delicious golden nectar, Thanks John!

Dear Chef John: I've been roasting chicken for some time, but there is one universal problem with the chicken I cook. The problem is that, the breast meat is rather dry - I brine my chicken, and the breast meat has a bit of flavor in, so I know brining did its job there. Still, even after the butter-under-the-skin technique, I still find the breast meat dry. What am I doing wrong?

imho it was toooooo buttery! i love butter as much as the next person but when the chicken is finished cooking.... all that oil... makes it a little difficult to make a gravy after
