【材料】:豬腳1斤半、花生半斤、青蔥3支、薑6片、八角兩粒、甘草2片、花椒適量、五香粉1小匙、冰糖2大匙、紹興100cc、高梁100cc、醬油150cc、味醂1­00cc
【做法】:
1. 首先將花生川燙去雜質後,加入八角、甘草、花椒,水煮30分鐘瀝水撈起備用。
2. 接著把準備好的豬腳入鍋川燙,撈起備用。
3. 將青蔥段鋪於鍋底,再加入少許的薑片以及川燙好的豬腳、紅露酒、米酒、味醂、醬油、冰糖後蓋上鍋蓋悶燒,並不時的翻動豬腳,接著加入適量的水悶燒90分鐘。
4. 最後再將川燙好的花生放入悶燒好的豬腳鍋中即可。
