Having lived in Israel during college, there will always be a special place in my my heart (and stomach) for Falafel. Crispy and bursting with middle-eastern spices, Falafel ALWAYS hits the spot. With the addition of my Creamy Cucumber sauce, Philadelphia Cream Cheese takes this foreign fritter to new heights!!

2 cup(s) of Garbanzo Beans
•1/3 cup(s) of Flour
•1 1/2 cup(s) of Scallions (1 cup for falafel mixture, 1/2 cup to sprinkle on top of prepared falafel sandwich)
•2 tbsp. of Italian Parsley
•2 tbsp. of Cilantro (for those of you who do not like cilantro, substitute with add
•1 tsp. of Coriander
•1 tsp. of Cumin
•4 tbsp. of Extra Virgin Olive Oil (3 tbsp for falafel mixture, 1 tbsp for Creamy Cucumber Sauce)
•4 ounce(s) of Philadelphia Cream Cheese
•2 tbsp. of Greek Yogurt
•1 tbsp. of Sour Cream
•1 Lemon - juice and rind
•1 tbsp. of Fresh Dill
•1 tsp. of Red Wine Vinegar
•1/2 tsp. of Garlic Powder
•3 tsp. of Kosher Salt (2 for Falafel, 1 for Creamy Cucumber Sauce)
•1 1/2 tsp. of Fresh Pepper (1 for Falafel, 1/2 for Creamy Cucumber Sauce)
•2 cup(s) of Diced Cucumber (1 cup for sauce, 1 cup to sprinkle on top of prepared falafel sandwich)
•1 cup(s) of Diced Tomatoes
•2 cup(s) of Shredded Cabbage
•1/2 cup(s) of Canola Oil (to fry falafel)
•6 Pita Pockets or Flat Pita Rounds
Steps
1.To make Falafel: In a blender or food processor, mix Garbanzo Beans, Flour, Coriander, Cumin, Cilantro, Parsley, 1 cup Scallions, 3 tbsp Olive Oil, 2 tsp Kosher Salt and 1 tsp Pepper until the ingredients form a paste.
2.Refrigerate Mixture for 20 minutes.
3.While mixture is cooling, make the Creamy Cucumber Sauce. Using a blender or food processor, mix together Philadelphia Cream Cheese, Greek Yogurt, Sour Cream, Lemon Juice, Lemon Rind, 1 cup Cucumber, Dill, Red Wine Vinegar, 1 tbsp Olive Oil, 1 tsp Salt, ½ tsp Pepper and ½ tsp Garlic Powder.
4.Wrap pita in tin foil and place into a 300 degree oven to warm.
5.Heat Canola Oil in a frying pan over medium heat and cover a cookie sheet with paper towel and place it next to the stove.
6.Take the Falafel mixture out of the refrigerator and form into rounds about the size of golf balls.
7.When oil is sizzling hot, place each Falafel Ball into the pan and gently flatten the top with your spatula.
8.Cook them on each side for 2-3 minutes until they are golden brown. Remove them from the oil, place them on a paper towels and sprinkle with Kosher Salt.
9.To assemble Falafel Sandwich: pour a couple tablespoons of sauce on (or into) pita. Top with Falafel, Cabbage, Tomatoes, Cucumbers and Scallions and drizzle with a little more sauce. To eat, gently fold sides together (like a taco) and dig in!!

You can 86 the cream cheese - I'd just adjust the yogurt and garlic.
