Greetings! Today I am sharing with you the process of pressure canning. This is my very first go of it. To tell you the truth, I purchased this canner 2 years ago when I realized that the world was going in a direction that I needed to prepare for. As a society we have come so far from the regular things that our grandparents used to do. My mother NEVER canned. Both of my grandmothers did, and they baked bread and they did all the things that everyone should know how to do. I am blessed that I was able to learn so much from my parents and my grandparents, my grandmothers and my step grandmother all three, taught me how to crochet and do needlework, and sew and make delicious things. My mother was a pastry chef and taught me all that I needed to know in that respect. I am still not the cake decorator that she once was, but I'm working on it. But for now, I turn to the pressure canner. My nemesis for two years. It has been laughing at me from the attic every time I watch a video by imstillworkin. She is a master of the pressure canner. I bow to her in humble admiration. My friends, Katzcradul and Bearlysceneranch have lit a fire under my big butt and gotten me to finally do this thing. So come along for the ride and watch me In my endeavor. For what it's worth, I am indeed kicking myself in the head because this was so easy and I am feeling a little guilty about letting all those fabulous meat sales go by without canning anything. No more, though, just yesterday I was able to purchase 20 lbs of pork butt for 1.27 a lb. I guess I'll be doing more canning this weekend!
