I think Bhakri is made from (coarse grained) wheat flour and "Rotla" (રોટલો in gujarati) is made from millet flour. In Gujarat, both bhakri and Rotla are coocked on a clay-pan called "tavdi"

would like to add that ur recipe says millet means bajra but while displaying on video it was mentioned as jawar & actually what i could see that dough u were using looks like jawar & bajra.....

What is the reason you cannot make the entire dough at once?

The entire dough is not made at once to avoid drying of bhakris.
