is it possible to replace the head gaskets on a 2000 Forester with pulling the engine? Also, which parts do you replace when you are in there (waterpump, etc.)

@jwiebe003 You can do it in or out of the car. I like doing it OUT because you'll need to reseal the caps on the back of the engine block and likely the oil pan gasket too. I recommend the timing belt, water pump and cam seals at the same time as well as valve cover gaskets.

do the pistons need to be in any certain position when you install the heads?

@poserskaterboy All four are centered in stroke when you put the crank on it's mark at the crank sensor.

Great video! I've just had my heads off and I'm concerned a coat of oil on the cams will be enough to save them until the oil pressure comes up since most has probably squeezed out from the tight bearing clearance. Should I run at 2k rpm to ensure the oil gets there fast?

@jdm1234 no. Idle is good. If you want to blow an engine on purpose (cash for clunkers etc) that's what you do. Just let it idle up to pressure. Use engine assembly lube if you're worried about it.
