  • Made this this morning. Very nice, very filling. Rehydrated the powdered coconut (Lee Lee Market, Tucson) and that worked just fine. Also, used the optional mint sprig from the patio garden. Going to try day 5's, but I'm not a cilantro fan, so fingers crossed I like it.

    If you don't like cilantro, you will probably have to sweeten it up with extra fruits and/or dates.

  • Hi Jane--this is a winner! Thanks for posting. The rehydrating of the coconut flakes works beautifully--a very neat trick. I did add a couple more dates, since I tend to like things sweet, and if I had had any, I would have added some mint. I'll be adding this to the repertoire. By the way, where does one get the glass straw you use? I've never seen that before! Thanks again. Really enjoy all the videos.

    I got the glass straws on etsy - strawsbycarli - but you can get them online elsewhere, too. I keep the insides clean by running a pipe cleaner through them.

  • Yes! I too loved the coconut, avo and mint together! I like the comments that some people like soularsusan added some extra dates. Very helpful for edits to the book!!! Thank you! Jane, you look so vibrant in that purple! Good color for you!

    Almost. I ate it with a spoon but it wasn't quite pudding.
